It’s fairly common knowledge that I don’t read as much as I should, or as much as I’d like to. Which I guess is why it took me so long to finish Chicken Soup for the Woman’s Soul. It’s a feel-good book, most definitely. It helps you to see the best in people and the best in the world around you. I love reading other people’s stories and found myself inspired by the tales in the book. I hope one day that I have a story that I can share, like the ones in this book!
I never managed to do a new recipe in week 10, so instead I did two in week 11 to catch up!
The first was a chicken stir fry with egg noodles in a black bean sauce. It’s so easy because everything gets thrown into the same pan! The result was really delicious, definitely one to try again! second recipe was a bacon and broccoli salad with pine nuts and cranberries. Again, it was really easy to make, and super quick! I think I could take or leave the cranberries, but it’d make a great dish for a warm Summer’s evening…if we ever get one!
I chose to do quite big squares, so that it’s simple without an overbearing pattern, and loved the way the purple and green look together (the picture unfortunately brightens the purple and washes out the green, so it looks a little different in real life!).
I’m really pleased with how it turned out, being my first proper crochet project! Mum’s already asked for some cushion covers so that will be my next new project!
For my new recipe this week I chose to make macaroni and four cheese gratins from Mini-Cocotte, just with a few alterations!
It seemed silly to buy a whole pack of macaroni when I had plenty of good penne in the cupboard already! Also, fontina cheese wasn’t available at my local supermarket, so I really made penne and three cheese gratins!
The recipe was really simple to follow, and easy to make! The top was lovely and crispy and the sauce tasted great. The only change I would make to be to make more sauce!
