This week I made Shiitake Fried Rice, adapted from Martha Stewart’s recipe.
I chose to leave out the ginger and red pepper flakes as they’re not something I use often and I felt it would be a bit of a waste to buy them and not use it all!
The end result was really tasty, and the recipe was simple enough to follow, once I’d planned out the timings.
The only concern I had was after dividing the ingredients in half ( I was only cooking for two) there really wasn’t enough! I could have kept the original quantities and only had a little left over!
